Different versions of the same song

I have been looking at what song I want to sing and play next. I was thinking about singing "Blowing in the Wind" by Bob Dylan. I have been playing the song with my brother. For that, I use sheet music that I got from a Bob Dylan songbook that my dad has. I listened to recordings and found out that the recording is different than the sheet music I was using. The recordings play the verses in a different order than what is listed in the songbook I was using. Then I googled chord charts for the song and found 4 different versions of the same song that all use different chords. If I play the version I am used to, it will sound different than the original recording. I am not sure what to do with this. I think part of it is that Bob Dylan changes how he plays his songs often.

2nd what Chelsea said. If there are multiple versions of a song, I usually just go with the version that I personally like best or want to hear. This is where using your ear to kind of make your own version of the chord chart could come in very handy. Looking forward to the day when we have an ear training course up. :D
